Elaboration and aging
Fermentation with partial carbonic maceration (destemmed pasta and whole bunch) in tanks at controlled temperature, slow maturation in the cellar for 15 months with maintenance on its fine lees from fermentations without programmed batonage, with aging in used French oak barrels with light toasting for 9 months and the rest in tank and bottle.
